Foodie Friday - Old School Pink Icing Cake.

Ingredients.
300g Unsalted Butter.
275g Caster Sugar.
2 TSP Vanilla Extract. 
4 Eggs.
300g Self Raising Flour.
Decoration.
Icing Powder.
Water.
Red Food Colouring.
100 + 1000s.

Pre heat oven to Gas mark 3/160oc/325of

In a bowl cream together the butter and caster sugar. 
Beat together the four eggs with a fork. 
Add the egg mixture along with 2 TSP of vanilla extract into the butter and caster sugar mixture and mix together.
Add in 300g of self raising flour and beat together until the mixture becomes smooth.
Pour the mixture into a tin of your choice. I chose to use a square tin.
Pop the mixture into the oven for 25 - 30 minutes.
Once cooked let allow the cake to cool before decorating. 
While the cake is cooling mix together the icing powder and water until the icing is a thick consistency then mix in a drop of red food colouring. 
Once the cake has cooled pour on the icing, level out, sprinkle on the 100 and 1000s and pop in the fridge to allow the icing to set.
Once the icing has set remove the cake from the tin, cut into pieces and enjoy.
