Foodie Friday - Blueberry & Lemon Cheesecake #CanderelTasteTest

There is nothing I enjoy more than spending my spare time in the kitchen baking, so when Canderel got in took asking if I would like to take part in their #CanderelTasteTest I couldn't pass up on the opportunity. 

Sugarly is the new granulated sweetener from Canderel which claims to be 'The closet thing to sugar since sugar.' Being someone who has an incredibly sweet tooth I always find that sugar alternatives taste nowhere near as good as the real stuff so I was keen to put Sugarly to the test. 

A recent study by Mindlab International has compared brain activity after eating treats prepared with sweetener (Canderel Sugarly) and regular sugar.  Results showed that in a number of tests, participants found the treats prepared with sweetener more desirable and enjoyed the taste more than the same treats made using sugar. In all of the other measures of brain activity, the sweetener performed just as well as sugar.

Benefits of Canderel Sugarly:
- 0 Calories per 1/2 teaspoon compared to 8 in sugar.
- No artificial taste.
- Crunch and texture of sugar.
- You only need half the amount of Canderel Sugarly to that of regular sugar.

The main question, Do it taste as good?!

Raspberry & Vanilla Cupcakes! 
Ingredients:
- 175g low fat spread.
- 3 eggs.
- 75g Canderel Sugarly.
- 100g self-raising flour, sieved.
- 1 tsp baking powder, sieved. 
- 1 tsp vanilla extract 
- 250g punnet raspberries. 
Instructions:
- Add the low fat spread, eggs, Canderel Sugarly, flour, baking powder and vanilla extract to the bowl of the food mixer and beat until creamy and well combined. 
- Stir through the raspberries then divide the mixture into the paper cases using a teaspoon. Put in the own and bake for 20-25 mins or until pale golden and risen and springy to touch.
- Remove from oven and transfer to a wire rack and leave to cool completely before serving.
Decorate:
- Dust with a little Canderel Sugarly.
- Mix 150g half fat cream cheese with 2 tsp Canderel Sugarly, spread on cooled cakes and top with fresh raspberry. This will increase the calories.

When it came to the cupcake tasting 4 out of 6 people preferred the cupcakes with the sugar claiming they were sweeter, tasted more like cakes and were fluffy on the inside compared to the Sugarly ones which were doughier in texture.
The two people who preferred the Sugarly ones claimed they liked them over the ones as the ones with sugar were to sweet, weren't as soft and they found the texture to be more like a muffin, light and enjoyable.   

Lemon & Blueberry Cheesecake
Ingredients:
For the Base:
- 50g Low fat spread.
- 150g Digestive lights, crushed.
For the topping:
- 3-4 sheets gelatine, depending on the size of the sheets.
- 360g half fat cream cheese.
- 100g Canderel Sugarly. 
- 250g pot vanilla quark.
- Zest and juice of 2 lemons.
- 250g punnet blueberries.
Instructions:
- First make the base, melt the low fat spread in a pan then add the crushed digestives and stir to mix, spoon into tin, spread to cover and press down with the back of a wooden spoon or base of a glass. Leave to cool then put in the fridge to chill. 
- Add the gelatine to a small bowl and cover with water, put to one side for about 5 minutes to soften. To make the topping, add the cream cheese, Canderel Sugarly, quark and zest and juice of the lemons to a food mixer and until combined. Squeeze the water from the gelatine, put it back in a clean bowl and pour in just enough boiling water to cover then whisk with a fork until no lumps. Add it to the cream cheese mixture and beat until well mixed.
- Stir in a third of the blueberries then spoon mixture over biscuit base and smooth the top. Put back in the fridge and chill overnight then release from tin, top with remaining blueberries and slice to serve. 

The tasting of the cheesecakes went down a treat with all 6 people preferring the cheesecake made with Sugarly. Everyone found the Sugarly one to be sweet in taste and were convinced it was made with real sugar. The one with real sugar was also a hit but everyone said that the one with sugar in tasted more lemony whereas the one with Sugarly in complimented the lemon flavor more.
